Method
- Season the chicken with salt and pepper. Sear in butter and oil over medium-high heat, 2–3 minutes per side. Set aside to rest.
- In the same pot, sauté onion and celery for 5 minutes. Add garlic and cook 1 minute more.
- Stir in the flour and cook 2 minutes. Slowly whisk in the chicken broth, then the half-and-half, stirring until smooth.
- Add the seasonings and bring to a gentle simmer.
- Skim the broth surface, then shred the chicken using two forks and stir it back into the pot. Taste and re-season.
- Whisk the dumpling dry ingredients together, then stir in the milk and melted butter just until a soft dough forms. Don't overmix.
- Drop spoonfuls of dough onto the simmering soup, spacing them apart. Add carrots and peas now.
- Cover and simmer for 15–20 minutes without lifting the lid. Check doneness with a toothpick — it should come out clean.
- Taste and adjust seasoning, garnish with parsley, and serve hot.
Notes
Rotisserie chicken works as a shortcut — skip searing and add it in step 5. Leftovers keep in the fridge for up to 3 days. This soup doesn't freeze well due to the cream and dumplings.
