Ingredients
  

  • 1 package (8 oz) cream cheese softened to room temperature
  • 1/2 cup Frank's RedHot Original Cayenne Pepper Sauce or Buffalo Wing Sauce
  • 1/2 cup Ranch dressing or Blue Cheese dressing
  • 2 cups cooked chicken, shredded or two 10-oz cans chunk chicken, drained well
  • 1 1/2 cups sharp cheddar cheese, freshly grated divided
  • Optional garnishes chopped green onions, blue cheese crumbles

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened cream cheese, Frank's RedHot sauce, and ranch dressing. Stir until completely smooth.
  3. Fold in the shredded chicken and 1/2 cup of the grated cheddar cheese. Mix until well combined.
  4. Spread the mixture evenly into a 1-quart baking dish.
  5. Sprinkle the remaining 1 cup of cheddar cheese evenly over the top.
  6. Bake uncovered for 20-25 minutes until the cheese is melted and the edges are bubbling.
  7. Garnish with fresh green onions and serve immediately with tortilla chips and celery sticks.

Notes

Best Cheese Tip: For the best melt and to avoid a greasy dip, always grate your own cheddar cheese from a block instead of using pre-bagged shredded cheese.
Chicken Tip: If using canned chicken, press down heavily on the lid to drain it extremely well. Excess water will dilute the buffalo flavor.
Make-Ahead: You can assemble this dip up to 48 hours in advance. Cover tightly and refrigerate until ready to bake. (Add 5 extra minutes to the baking time if starting from cold).
